My family loves wing night! I personally love it because it's a quick and easy recipe for those busy weeknights. I love using my air fryer for wings because it gets the skin good and crispy. SO DELICIOUS! Our family cleans the platter when we do this dish! Compare the cost of a big healthy meal to going out to eat. (Pro tip: We also add other root vegetables if we have them on hand, i.e. sweet potatoes, red potatoes and celery.)
Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh.
Slice the chicken onto a platter and serve it with the vegetables.

This recipe is our go-to for pot roast. Both Dave and I grew up as roast as a staple meal in our household. We like our beef roast to be juicy and fall apart when you eat it. This recipe adapted from Better Homes & Gardens Cookbook 14th Ed. fits the bill. For an extra flavor, sear roast on all sides in hot oil before slow cooking. For those that like extra juice, double the broth, Worcestershire sauce, and basil.
