Mini Meatloaves

This twist on meatballs is an easy family favorite. Use a muffin tin and make the mini meatloaves as small or large as you want. You can also use different fat percentages of grassfed ground beef. Can make anywhere from 12 to 15 mini meatloaves. The recipe can be easily reduced or doubled. Serve with mashed potatoes or a favorite vegetable.

Ingredients
- (2 lb.) 80/20 Ground Beef
- (2/3 c.) Breadcrumbs or Ground Oats
- (1/2 c.) Onions, Finely Chopped
- (1 tsp) Garlic Powder
- (1 Tbsp) BBQ Sauce
- (1 Tbsp) Mustard
- (1 tsp) Chili Powder
- (1 tsp) Real Salt Kosher Shaker
- (1/2 tsp) Black Pepper
- (1) Egg, slightly beaten
- Meatloaf Sauce:
- (1/3 c.) Brown Sugar or Sweeter Alternative like Coconut Sugar or Molasses
- (1/2 c.) Ketchup
- (2 tsp) Dijon Mustard or Regular Mustard
- (Sprinkle) Nutmeg
Directions
- Preheat Oven to 350°F
- In a large mixing bowl, combine all meatloaf ingredients.
- Divide the mixture evenly and press into muffin tin cups
- Bake for 15 min. While baking, mix Meatloaf Sauce ingredients.
- Remove from oven. Pat off grease from the top of the meatballs and drizzle with Meatloaf Sauce.
- Return to oven for 10-15 minutes.
- Remove from oven when internal temperature of meatloaves has reached approximately 160°F
