Chicken Fried Rice
This recipe is an absolute favorite of my oldest son. My mom used to make this growing up, and I've just adapted it as the years have passed. This recipe can be adapted in a bunch of ways. You can add a variety of veggies or none at all, add more authentic asian flavorings, etc. I hope for you adventurous cooks, that you put your own spin on it and share if you do!

Ingredients

  • (2-3 Chicken Breasts) 12 oz Chicken Breast
  • (2 c) Rice
  • (2) Eggs
  • (1 c) Diced Yellow or White Onion
  • (1/2 a bag) Frozen Mixed Vegetables
  • Curry Powder
  • Garlic Powder
  • Soysauce
  • Butter
  • Green Onions (if desired)

Directions

A lot of times, I forget to get my chicken breasts out to defrost, so I cook my chicken in the Instant Pot from frozen. To do this, I place some water in the bottom of my Instant Pot (about a 1/4 cup), then I place the frozen breasts on top and season (sometimes salt, sometimes some curry powder). Set for 10-12 minutes on high pressure. Once finished, release the seal and remove the chicken with a fork.

  • Cook 2 cups of rice per package directions
  • Cook chicken breasts, season with salt and/or curry powder
  • While rice and chicken are cooking, dice onions and cook in a big saucepan with butter until translucent.
  • After onions are done, scramble two eggs, then set aside
  • When chicken is done, dice or shred it into bite-sized pieces
  • When rice is done, empty rice into a big saucepan on medium heat
  • Add chicken, onions, and scrambled eggs, and stir
  • Pour in a generous amount of soy sauce, garlic powder, curry powder, and several pats of butter
  • Add frozen mixed vegetables and stir. *Note- can use fresh veggies or canned. If using fresh, cook in butter after onions
  • Continue adding soy sauce, curry powder, and butter, and taste testing until the desired flavor is reached. Rice should be a nice golden color. I personally like some of the rice to get a little buttery, crispy from the bottom of the pan.
  • Remove from heat when vegetables are cooked through and a sampled bite is flavorful
  • Serve chicken fried rice in bowls. Top with chopped green onions if desired
