Beef Nachos
Easy ground beef meal for a busy night! Can easily swap out or add whatever toppings you choose!

Ingredients

  • (1-2 tsp) Taco Shaker Seasoning
  • (2) Diced Yellow Onions
  • (2) Bags of Tortilla Chips
  • (1 Can) Refried Beans or Black Beans
  • (16 oz or more!) Shredded Cheese (Cheddar and Monterey Jack or Fiesta Blend)
  • (3) Diced Roma Tomatoes
  • (2-3) Diced Green Onions
  • (1 lb) 80/20 Ground Beef

Directions

  1. Preheat oven to 400 degrees.
  2. Brown ground beef and diced onions over medium-high heat until fully cooked, drain.
  3. Return beef to pan, and sprinkle on the taco seasoning.
  4. Stir in 3/4 c. water, bring to a simmer, reduce heat, and simmer until liquid mostly evaporates, about 5 minutes.
  5. While the beef is cooking, add a generous layer of chips to two baking sheets lined with parchment paper.
  6. Spoon on refried or black beans, half on each pan of chips.
  7. Spoon on half the ground beef onto each pan of chips and sprinkle cheese on top
  8. Bake at 400 degrees for 10 min or until cheese melts. Watch to not burn chips.
  9. Remove from the oven and sprinkle on diced tomatoes and green onions.
  10. Serve immediately.
