Beef Nachos

Easy ground beef meal for a busy night! Can easily swap out or add whatever toppings you choose!

Ingredients
- (1-2 tsp) Taco Shaker Seasoning
- (2) Diced Yellow Onions
- (2) Bags of Tortilla Chips
- (1 Can) Refried Beans or Black Beans
- (16 oz or more!) Shredded Cheese (Cheddar and Monterey Jack or Fiesta Blend)
- (3) Diced Roma Tomatoes
- (2-3) Diced Green Onions
- (1 lb) 80/20 Ground Beef
Directions
- Preheat oven to 400 degrees.
- Brown ground beef and diced onions over medium-high heat until fully cooked, drain.
- Return beef to pan, and sprinkle on the taco seasoning.
- Stir in 3/4 c. water, bring to a simmer, reduce heat, and simmer until liquid mostly evaporates, about 5 minutes.
- While the beef is cooking, add a generous layer of chips to two baking sheets lined with parchment paper.
- Spoon on refried or black beans, half on each pan of chips.
- Spoon on half the ground beef onto each pan of chips and sprinkle cheese on top
- Bake at 400 degrees for 10 min or until cheese melts. Watch to not burn chips.
- Remove from the oven and sprinkle on diced tomatoes and green onions.
- Serve immediately.
